UPDATE:

Turns out the nvme kernel module wasn't being loaded for some reason??

Worked around it by putting force_drivers+=" nvme " in /etc/dracut.conf.d/, but I'm not quite sure why it suddenly broke... Perhaps the nvme kernel module was built-in, and some update made it a loadable module?
